Sierra de Codex 100% Ibérico Acorn-Fed Ham, our PATA NEGRA, is the top rating ham corresponding to our Ibérico Products. It is obtained following the traditional salting, curing and maturing of the hind legs of our 100% Ibérico pigs, which in turn are allowed to free-range throughout our dehesas (meadowlands) in an extensive and natural way during the montanera (free-range period), feasting on the abundant acorns that are to be found under the Holm oaks.
Curing of the pieces is a gradual and lengthy process, which may range between 36 and 42 months, always using the most traditional of methods in our natural drying sheds that are found in Guijuelo. It is precisely due to the altitude and cold micro-climate of Guijuelo that we are able to use less salt in our curing process in comparison to other areas of production. Hence that first sweet connotation on our palate when we try the ham.

El jamón buenísimo,, pero no llegó a la dirección indicada. Era un regalo que debía llegar a una dirección de destino y tuve que entregarlo en persona. Además, tras preguntar me indicaron que se había enviado a la dirección correcta, cosa que no es cierta y deberían saberlo.

Excelente jamón 100% ibérico de bellota. Compré el de 7kg porque era el único que quedaba, y se nos ha quedado corto a la familia. Tiene tocino pero lo normal para ser bellota. Espectacular el sabor que tiene, y muy contenta con la relación calidad precio. Desde luego que repetiré y recomendaré a todos este jamón.

Una decepción, me salió super duro y dado que tenía toda la familia para la cena y comida de Navidad no tuve más remedio que cortarlo, pero no se ha podido aprovechar lo bueno que estaba de sabor al estar tan duro.

[3] The current labeling system also applies to paleta front legs, with jamón coming from the hind leg and caña de lomo loin cuts from Iberian pigs. [3] Pata Negra[edit] Meaning literally black foot or paw , pata negra is a commercial label for jamón ibérico.

Hello Antonio. There are two kinds of Ibérico acorn-fed ham:
Acorn-fed 100% ibérico and acorn-fed 75 or 50% ibérico breed ham.
The official name for the 100% Ibérico acorn-fed ham is PATA NEGRA according to ibérico denominations rules from 2014, and its seal is black.
50% and 75% Ibérico breed acorn-fed hams have a red seal and the use of the word pata negra is NOT ALLOWED.
As you can see this the best acorn-fed Ibérico ham of all kinds. That’s the reason we are alowed to use acorns, acorns trees and dehesa in its images.
