Sierra de Codex 100% Ibérico Acorn-Fed Shoulder Ham, our PATA NEGRA, is the top rating shoulder ham corresponding to our Ibérico Products. It is obtained following the traditional salting, curing and maturing of the front legs of our 100% Ibérico pigs, which in turn are allowed to free-range throughout our dehesas (meadowlands) in an extensive and natural way during the montanera (free-range period), feasting on the abundant acorns that are to be found under the Holm oaks.

Curing of the pieces is a gradual and lengthy process, which may range between 24 and 36 months, always using the most traditional of methods in our natural drying sheds that are found in Guijuelo. It is precisely due to the altitude and cold micro-climate of Guijuelo that we are able to use less salt in our curing process in comparison to other areas of production. Hence that first sweet connotation on our palate when we try the ham.
